HOW TO MAKE DHABA STYLE ANDA BHURJI
A classic Indian breakfast, Egg Bhurji is a spicy mouth-watering dish. It is basically made with sauteed onions, tomatoes, Indian spices and herbs with scrambled beaten eggs. This dish is very popular in all regions of India, and even all over the Indian subcontinent. Eggs are called "Anda" in Hindi and Scramble refers to "Bhurji". This is the Indian style of cooking scrambled eggs with different spices. Dhaba Style Anda Bhurji is a unique and delicious recipe with all those rustic flavours you get in Dhabas.
INGREDIENTS:
- Raw Eggs - 6
- Onions, chopped - 2 medium
- Ginger, chopped - 2 tsp
- Green Chillies, chopped - 4
- Tomatoes, chopped - 1 medium
- Coriander Leaves, chopped - 6-8 tbsp
- Oil - 2 tbsp
- Turmeric Powder – ¼ tsp
- Chilli Powder – 1tsp
- Coriander Powder – ¼ tsp
- Salt – 1 tsp
PROCESS:
- Heat oil in a pan and add the finely chopped onions. Fry on medium heat for 2 minutes.
- Now add the finely chopped ginger and fry for about 1 minute on medium heat till the onions are soft and light golden in colour.
- Now add the finely chopped coriander leaves and give a mix and fry for 30 seconds on medium heat.
- Now add the chopped tomatoes with 1 tsp salt and fry on medium heat for 2 minutes till the tomatoes are mushy.
- Now add all the dry spices and mix and fry on low heat for 2 minutes.
- When oil starts coming from the masala, break the eggs into the masala and give it a nice stir.
- Fry everything for 4-5 minutes on medium heat and then add the chopped green chillies.
- Give a mix and cook for 1-2 minutes till everything is combined.
- Serve with chapati or naan.
CONCLUSION:
This Dhaba Style Egg Bhurji or Anda Bhurji needs minimal ingredients that you will always have in the house and is so easy to make, you will get hooked to making it every week. I love that these Indian scrambled eggs can be enjoyed in any meal of the day. For breakfast, with bread or for lunch/dinner with roti, naan or parathas.
