Dhaba Style Kebab Curry Masala is a delicious and juicy dish which is cooked in spicy onion tomato masala with different Indian spices and condiments. This kebab curry masala can be made with minced mutton or chicken keema, or if you are a vegetarian then you can also make this curry with vegetable kebab as well.

INGREDIENTS:

FOR KEBABS:

  • Chicken/mutton (minced or keema) – 500 grams
  • Egg – 1
  • Onion (finely chopped) – 1 big
  • Green chillies (finely chopped) – 2
  • Coriander leaves (finely chopped) – 4 tbsp
  • Bread (mashed with 2 tbsp of milk) – 1
  • Garlic (finely chopped) – 2 tsp
  • Ginger (finely chopped) – 2 tsp
  • Roasted gram flour – 1 tbsp
  • Salt – 1 tbsp
  • Cumin powder – 1 tsp
  • Garam masala – 1 tsp
  • Red chilli powder – 1 tsp
  • Vegetable oil(for frying) – 4 tbsp

FOR CURRY:

  • Onions (finely chopped) – 2 big
  • Tomatoes (chopped or pureed) – 2 medium
  • Ginger garlic (paste) – 2 tsp
  • Red chilli powder – ½ tsp
  • Turmeric powder – ½ tsp
  • Kashmiri red chilli powder – 2 tsp
  • Salt – ½ tsp or as required
  • Vegetable oil – 2 tbsp
  • Water – ½ cup or as required

PREPARATION:

FOR MAKING KEBABS:

  1. Take a big bowl and mix all the ingredients with the minced chicken/mutton. Keep it inside the fridge for 25-30 minutes. Now make cylindrical-shaped kebabs and keep them aside.
  2. Now heat oil in a frying pan and fry the cylindrical kebabs till they are 50% cooked or slightly brown in colour.
  3. Cut those fried seekh kebabs into small pieces and fry them in the remaining oil till golden brown in colour. Fry all the kebabs one by one and set them aside.

PROCESS:

  1. Take a kadhai or a pan, add vegetable oil and heat it on low to medium flame. Now add finely chopped onions and fry them till they are golden in colour.
  2. Now add the ginger garlic paste and fry for 1 min on medium flame.
  3. Add tomatoes and cook till oil separates.
  4. Add all the dry spices and mix nicely. Cook everything on low to medium flame.
  5. Now add all the fried kebabs pieces and cook for another 2 minutes on medium flame.
  6. When oil separates from the masala, then add ½ cup of water or as required to make curry.
  7. Now cover and cook the kebabs for 20-25 minutes on low flame. NOTE: slow cooking on low heat will help the seekh kebabs to be more succulent and juicy.
  8. When oil comes on top then add the finely chopped green chillies and garnish it with coriander leaves.
  9. Dhaba Style Kebab Curry Masala is ready. Serve it with butter naan, or jeera rice.
