KAJU CHICKEN CURRY IN RESTAURANT STYLE
Kaju Chicken Curry is a creamy rich, mildly spiced chicken gravy that goes well as a side dish with naan, roti or paratha. This creamy Kaju Chicken Curry has a cream based sauce made of cashew nuts and it is indeed one of the most luscious sauces. "Kaju" is the hindi word for cashew. When the cool cashew cream is blended with all the aromatic Indian spices, it creates the most amazing creamy cashew chicken curry ever.
INGREDIENTS:
- Chicken with bones – 1 kg
- Onions, chopped – 2 medium
- Ginger garlic paste – 2 tsp
- Kasuri methi (Fenugreek Leaves) – 1 tsp (roasted and crushed)
- Salt - 2 tsp
- Cashew nuts – 10
- Whole red chillies – 5-6
- Tomatoes – 2 medium
- Turmeric powder – 1 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 2 tsp
- Garam masala powder – 2 tsp
- Oil – 5-6 tbsp
PREPARATION:
- Chop the onions and cut the tomatoes into 2 halves.
- In a pan,dry roast the cashew nuts and the red chillies on low heat for 2-3 minutes. Set aside to cool it down. First, coarse grind the cashew and red chillies then add the tomatoes. Continue to blend it into a smooth paste.
- Dry roast the kasuri methi (fenugreek leaves) in a pan, allow it to cool and then crush slightly with your hands.
PROCESS:
- Heat oil in a pan/kadai.
- On medium heat,fry the chopped onions for 5-6 minutes till it turns translucent.
- Then add the Ginger garlic paste and fry it for 2 minutes on low heat.
- Add turmeric powder, red chili powder and coriander powder in the mixture. Fry it on low heat for 2-3 minutes after sprinkling some water into the masala mixture.
- Now add the chicken pieces and fry them with the masala on medium heat for 5-6 minutes till the chicken is brown in color.
- Add the salt and mix it well.
- Now add in the cashew tomato red chili paste, mix nicely and fry for 5-6 mins on medium to low heat till oil separates.
- Now add the Garam Masala Powder into the masala, mix and cook for 1 minute.
- Add 200 ml water, mix well and cook it for another 15 minutes on medium heat.
- Add Kasuri Methi, mix well and simmer for around 2 minutes.
- Serve with chapati or rice.
