Dhaba Style Egg Paratha
Egg paratha is a spicy and delicious egg-stuffed, whole-wheat, protein-packed breakfast option. It is also known as “Anda Paratha”. INGREDIENTS:
FOR THE EGG STUFFING:
- Eggs – 3
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Turmeric powder – ¼ tsp
- Green chilli (finely chopped) – 1
- Onion (finely chopped) – 1 medium
- Coriander leaves (finely chopped) – 1 tbsp
- Salt – 2 tsp or as required
FOR THE DOUGH:
- Whole-wheat flour (Atta) – 1 cup
- Salt – ¼ tsp or as required
- Water – as required
- Vegetable oil – 2 tbsp
- Butter or Ghee (clarified butter) – 3 tbsp
PREPARATION:
FOR DOUGH MAKING:
- Take a big bowl, and add whole-wheat flour and salt to it. Mix nicely.
- Now gradually add water and start kneading it till everything is well combined. Knead it into a smooth dough. Cover with a cotton cloth to keep it soft and set aside.
FOR THE EGG STUFFING:
- In a bowl, break the eggs and add finely chopped onions, coriander leaves, green chillies and all the spices mentioned earlier. Mix everything nicely and keep it aside.
PROCESS:
- Take the dough and divide it into equal balls. Now flatten those dough balls with your hands and apply some dry flour.
- Take a dough ball and start rolling it into a thin chapati on a rolling board.
- Place a tawa on low to medium flame and cook the thin chapati or paratha from both sides until small golden spots appear.
- When the chapati starts to puff up, make a slit from the side of the paratha and carefully pour some egg mixture inside the paratha pocket.
- Continue to cook the egg paratha on low to medium flame. Gently press the paratha to cook even more properly.
- Now drizzle some vegetable oil or ghee (clarified butter) and flip to cook both sides until a nice golden colour appears.
- Serve hot with some butter on top and enjoy with a cup of hot tea, achaar (pickles) or tomato ketchup.
