Dhaba Style Anda Malai Masala
Anda Malai
Masala is a delicious, simple and easy dish that is very low on spices and
condiments. It is cooked in creamy gravy and if you are an egg lover then
definitely this recipe is for you. This Dhaba Style Anda Malai Masala is
extremely delicious and it has a cream-based gravy which is basically made with
onion paste, milk and other spices and condiments.
INGREDIENTS:
- Eggs – 4
- Onions (roughly cubed) - 2 medium
- Ginger-garlic paste – 2 tsp
- Green chillies – 2
- Milk – 200 ml
- Cumin powder – 1 tsp
- Pepper powder – ½ tsp
- Garam masala powder – 1 tsp
- Coriander leaves (finely chopped) – 1 bunch
- Salt – 1 tsp or as required
- Oil – 3 tbsp
PREPARATION:
- Take a deep vessel, boil the eggs and cut them into halves.
- In a grinder, put the green chillies and cubed onions and blend them into a smooth paste.
- Chop the coriander leaves finely and set aside.
PROCESS:
- Take a kadhai, add oil and let it heat for a few seconds. Now add the onion-green chilli paste that we made earlier. Cook for 2-3 minutes on low flame.
- Now add the ginger-garlic paste and mix nicely.
- Keep cooking for around 15-20 minutes or till the colour changes. NOTE: keep the flame on low otherwise the masala will stick to the kadhai.
- Now switch off the flame and add milk. Stir continuously and mix it nicely with the masala.
- Now again turn on the flame and keep it on low flame.
- When the oil starts separating, add pepper powder, salt, cumin powder and garam masala powder. Mix everything nicely and cook for another 2-3 minutes.
- Now add the egg halves into the gravy, and remember to put the yolk side down so that it can absorb the spices nicely.
- Cover and cook for a few minutes. Now turn the egg halves yolk side up.
- Now add the finely chopped coriander leaves and mix well.
- Cover and cook till oil separates.
- Dhaba Style Anda Malai Masala is ready to be served with naan, roti or paratha.
