Besan Ke Laddoo
Besan Laddoo is a classic, aromatic, and mouthwatering traditional North Indian Sweet that is made with gram flour, powdered sugar, cardamom, and ghee (clarified butter). Besan Laddoo has a melt-in-the-mouth texture and is immensely popular in India. These are mostly made during celebrations and special occasions like weddings or festivals. This is a famous sweet in India during Diwali, Dussehra, and Holi. Besan Laddoo can be made with many variations but the traditional version only requires gram flour, cardamoms, sugar, and ghee.
INGREDIENTS:
- Gram flour (Besan) – 2 cups
- Sugar – 1 cup
- Green cardamoms – 4
- Ghee – ½ cup
- Cashew nuts (optional) – 2 tbsp
PREPARATION:
- Cut the cashew nuts into small pieces and dry roast on low flame in a pan until crunchy. You can use any kind of dry fruit.
- Add sugar and cardamoms in a blender and blend into a fine powder without adding water to it.
PROCESS:
- Take a large kadhai and add ghee (clarified butter). Heat it for 10-15 seconds and ad gram flour (besan).
- Roast till the besan gets combined with the ghee nicely. Remember to fry on low flame otherwise the gram flour will burn quickly.
- If the mixture turns dry, then you can add a little amount of ghee.
- Continue to roast the gram flour on low flame. After 15-20 minutes, besan will start releasing ghee.
- Keep roasting on low flame till the gram flour turns grainy and golden brown in color. This may take 25-30 minutes.
- Now transfer the mixture to a large bowl and let it cool slightly.
- Add the previously roasted cashew nuts to the gram flour mixture.
- Now add the sugar cardamom powder to the gram flour mixture. NOTE: Remember to add the powdered sugar when the gram flour is slightly hot otherwise the sugar will melt and the mixture will become watery and it will become difficult to make laddoos out of it.
- Now mix everything nicely and start making laddoos. You can make the laddoo size of your choice.
- Besan Ke Laddoo is ready. Garnish with some pistachios on top and serve!
