Rice is a hearty meal that brings back so many memories of those beautiful
days when we used to crave Chinese delicacies and our mothers tried their
best to make us these dishes so perfectly. But nowadays, everyone prefers to go
outside and eat these foods whenever they want. Making restaurant like
Indo-Chinese food at home is very easy nowadays because everything is available
in the supermarkets. Egg Fried Rice is a very healthy option because it has
many vegetables in it and egg is a great option for a fulfilling meal.
INGREDIENTS:
- Basmati rice or any rice – 3 cups
- Eggs – 3
- Spring onions (white and green parts separated) – 3 to 4 chopped
- Carrot (julienned) – ½ cup
- Bell pepper (julienned) – ½ cup
- Cabbage (shredded) – ½ cup
- Garlic (finely chopped) – 1 tbsp
- Schezwan sauce or any hot sauce – 1 ½ tbsp
- Soya sauce – 1 ½ tbsp
- Black pepper powder – ¼ tsp
- Salt – ¼ tsp or as required
- Vinegar – 1 ½ tsp
- Oil – 2 tbsp
PREPARATION:
- Wash the rice properly and soak it for 25-30 minutes.
- Boil 5-6 cups of clean water in a large pot.
- Drain the excess water from the soaked rice and mix it with the boiling water.
- Add ½ teaspoon of salt and let it cook.
- When the rice is 90% cooked, drain the excess water and cool completely. NOTE: Do not overcook or completely cook the rice in this process.
- On the other hand, chop the veggies and garlic.
- In a bowl, break the eggs and beat until soft and fluffy.
PROCESS:
- Set a pan or a wok on high flame. Add oil and chopped garlic. Sauté for about 25-30 seconds. Now add the white part of the spring onion and sauté for a minute.
- Add the chopped veggies and fry for 1-2 minutes. The veggies should be crunchy and not soggy.
- Reduce the flame to low and slide the veggies to one side of the wok. Now add the beaten eggs and scramble them for a minute.
- Cook until they are almost done and fluffy in texture but remember not to overcook them.
- Increase the heat to medium flame and add vinegar, schezwan, or any hot sauce and soya sauce.
- Add black pepper powder and the green part of the spring onion. Immediately add the cooked rice.
- Stir fry on high flame for about 2-3 minutes.
- Adjust the spice and salt as your preference.
- Egg fried rice is ready. Garnish with spring onions or sesame seeds on top and serve hot.

minutes. Chinese recipes or dishes are very easy to make nowadays because so many ingredients are available in the market easily. You can also
make vegetable fried rice or chicken fried rice with the same method. Add as
many vegetables as you want to add and you can also customize by adding
different types of sauces. This is a very famous and quick Indo-Chinese dish
that everyone loves.
