Dhaba Style Paneer Bhurji
Paneer bhurji is a famous North Indian cuisine which is made with crumbled cottage cheese (paneer), Indian spices and condiments. Paneer translates to Indian cottage cheese and in Hindi, bhurji means scrambled. So Paneer Bhurji means scrambled Indian cottage cheese which is basically cooked in Indian style with spicy tomato onion masala.
INGREDIENTS:
- Paneer/cottage cheese – 4 cup
- Onion (finely chopped) – 2 medium
- Tomato (finely chopped) – 2 medium
- Ginger-garlic paste – 2 tsp
- Cumin seeds (jeera) – 2 tsp
- Green chilli (finely chopped) – 2
- Kashmiri red chilli powder – 1 tsp
- Turmeric powder – 1 tsp
- Garam masala powder – 1 tsp
- Dry fenugreek leaves (roasted and crushed) – 2 tsp
- Coriander leaves (finely chopped) – 4 tbsp
- Salt – 2 tsp or as required
- Oil – 4 tbsp
PROCESS:
- Take a large kadhai and heat some oil. Add cumin seeds and fry till they are aromatic.
- Now add the finely chopped onions and green chillies. Sauté them on a medium flame for 2 minutes.
- When the onions are light brown in colour, add in the ginger-garlic paste and sauté for 1 minute on low to medium flame.
- Now add red chilli powder, garam masala powder, turmeric powder and salt as required.
- Mix everything and fry on low flame for a minute or two.
- When the masala starts to release oil, then add the crumbled cottage cheese and mix nicely.
- Gently mix everything without completely mashing the paneer.
- Cover and cook the paneer for 2-3 minutes on low to medium flame. NOTE: do not overcook otherwise the paneer will turn chewy and hard.
- Now add the roasted and crushed dry fenugreek leaves and the finely chopped coriander leaves.
- Mix everything until well combined.
- Dhaba Style Paneer Bhurji is ready. Serve it with paratha, naan, or chapati.
