Street Style Crispy Chilli Potato
Chilli Potato is a famous Indo-Chinese appetizer made with crispy deep-fried potato wedges, glossy spicy, sour and sweet sauces with some stir-fried vegetables. Chilli potato is a fusion dish of Indian and
Chinese. It is very famous in Indian restaurants and street stalls also. It’s a
very popular food among youngsters. Its lip-smacking taste is everything
to drool over and over again.
INGREDIENTS:
- Potato (cut in wedges) – 4
- All-purpose flour- 4 tbsp
- Corn flour – 4 tbsp
- Ginger (finely chopped) – 2 inch
- Ginger (finely chopped) – 6 cloves
- Spring onions (finely chopped) – 4 tbsp
- Onion (petals) – 1 big
- Capsicum (cut in square shape) – 1 medium
- Water – 1 cup
- Chilli powder – 1 tsp
- Pepper powder – ½ tsp
- Salt – 2 tsp or as required
- Vinegar – 4 tbsp
- Soy sauce – 4 tbsp
- Tomato sauce – 4 tbsp
- Red chilli powder – 1 tbsp
- Green chilli sauce – 1 tbsp
- Oil – 4 tbsp
PREPARATION:
- Take a big pan or a vessel; add water with 1 tsp of salt in it.
- Wait until the water comes to a boil and add the potato wedges.
- Boil the potatoes until they are semi-cooked. NOTE: do not make the potatoes very soft otherwise they will stick to the pan at the time of frying.
- Drain the potatoes well and set aside.
- Take a big bowl and add chilli powder and salt as per your taste.
- Now add all-purpose flour, corn flour and a little bit of water to form a smooth batter.
- Add the potato wedges into the batter and mix till everything is well combined.
- Take a kadhai and add oil to it. Deep fry the potato wedges on medium flame until golden in colour and crispy in texture.
PROCESS:
- Take a large kadhai or wok and add 2 tbsp of oil. Now add finely chopped ginger, garlic and spring onions. Fry for 1 minute on high flame.
- Now add the onion petals and square-shaped capsicum. Stir fry them for a minute or two on high flame.
- Add tomato sauce, red chilli sauce, green chilli sauce, vinegar, soy sauce, salt and pepper powder. Mix on high flame until everything is combined.
- In a small bowl, add 1 tsp of corn flour with ½ cup of water. Add this corn flour slurry to the kadhai and mix well.
- Cook everything until the slurry is glossy in texture.
- Add the fried potato wedges and 1 tbsp of finely chopped spring onions. Mix everything on high flame for 30 seconds.
- Enjoy the street-style crispy chilli potato with some roasted sesame seeds on top.
