Bhatura is North Indian bread that is deep-fried perfectly until nice and fluffy. It is basically made with a leavened dough of flour, salt, yogurt, and a leavening agent. Then small portions of dough are rolled into round or oval-shaped discs and then it is deep fried. Chole Bhature is immensely popular in India and you will find this dish being served in almost every other place like Punjabi dhabas, chaat places, on streets, or in restaurants. It is said that Delhi has the best Chole Bhature.

INGREDIENTS:

  • All-purpose flour (maida) - - 2 cups
  • Semolina (fine sooji) – 1 ½ to 2 tbsp
  • Plain yogurt (curd) – 4 tbsp
  • Salt – ¼ tsp or as required
  • Eno (fruit salt) – 1 tsp
  • Oil – 1 tbsp
  • Warm water – ½ cup or as needed to form a dough
  • Oil (for deep frying the bhatura’s) – 1 ½ cups

PREPARATION:

  1. In a mixing bowl, add all-purpose flour, salt, and semolina. Mix everything and then add curd and oil.
  2. Mix nicely until yogurt and oil incorporate into the flour.
  3. Then add eno (you can also use baking powder or baking soda) and give a nice mix.
  4. Now pour warm water little by little and form dough.
  5. Knead the dough until soft. NOTE: The dough should be stretchy and elastic type otherwise it will not form the classic chewy texture. If the dough hasn’t got this texture then knead it for a little longer.
  6. Sprinkle a few drops of oil on the dough.
  7. Immediately start making the bhaturas if you have used eno and if you are using baking soda or baking powder then cover the dough and let it rest for 2 to 4 hours in a warm place.
  8. Divide the dough into 8 parts and smooth out the dough balls to make them crack-free.
  9. Smear a few drops of oil and keep them covered.
  10. Grease the rolling board where you are going to roll the dough balls.
  11. Flatten a dough ball and roll the bhatura into a round or oval shape.
  12. Remember not to remove the bhatura in between the rolling process again and again. Instead, turn your rolling board to roll the bhaturas.

PROCESS:

  1. In a deep kadhai, add oil and let it heat nicely.
  2. Drop a small pinch-sized dough into the oil to check the temperature for frying. The dough has to come upward immediately.
  3. Now carefully slide a bhatura into the kadhai.
  4. Press down gently to help it puff up nicely.
  5. Flip it to properly cook the other side as well.
  6. Make the other bhatura’s with the same process.
  7. Golden and crispy Bhatura’s are ready. Serve hot with spicy chole, sliced onions, and a glass of chilled lassi.

Bhatura is a very popular bread among North Indians. This fluffy sour deep fried bread is best with spicy chickpeas curry or gravy. Chole Bhature is a wholesome breakfast option for almost all Indians. Bhatura can be made with different fillings/stuffings also like paneer bhatura or aloo bhatura. Bhatura has a nice crisp texture on the outside and soft on the inside that just melts in your mouth perfectly.
