Malai Pista Kulfi
Malai kulfi
or malai pista kulfi is a creamy and delicious Indian summer treat. It is
basically made with thickened creamy milk, cardamom, nuts, and sweetener. In Hindi,
Malai translates to “Cream”, Pista translates to “nuts” and kulfi is simply an
Indian name for ice cream. Kulfi is actually thickened milk which is called
Rabri. Malai Pista Kulfi is a classic Indian dessert that is available in
almost all restaurants or shops in India. Nowadays there are a lot of flavors
in kulfi like chocolate, mango, strawberry, and even paan but I’m going to
share the classic recipe of kulfi.
INGREDIENTS:
- Milk – 2 liters
- Sugar – ½ cup
- Kesar (saffron) – ¼ tsp
- Almonds (chopped) – 2 tbsp
- Cashews (chopped) – 2 tbsp
- Pistachios (chopped) – 2 tbsp
- Cardamom powder – ½ tsp
FOR MAWA:
- Milk powder (unsweetened) – 1 cup
- Milk – ½ cup
- Cream – 1 cup
PREPARATION:
- Take a pan and add milk, cream, and milk powder.
- Mix well on low flame and make sure there are no lumps in the mixture.
- Continue to cook until the milk thickens and starts to leave the sides of the pan. Do not burn the mixture.
- Instant mawa or khoya is ready. Refrigerate or use immediately if you want to.
PROCESS:
FOR KULFI:
- Take a deep pan or kadhai. Add the milk and saffron. Keep the flame on low. Stir and bring the milk to a boil without burning it.
- Cook until the milk thickens. Continue to cook until it is reduced to a quarter.
- Now add the prepared mawa and stir well. Also, add sugar and cook on low flame for 2-3 minutes.
- Add the chopped nuts and mix well.
- Wait for the Kulfi mixture to cool down.
- Pour the mixture into ice cream or kulfi molds. You can also pour this mixture into glass cups or matka.
- Cover and freeze the Kulfi for at least 8-9 hours until it sets completely.
- Finally, garnish with some chopped nuts, and enjoy.
