Onion Coriander Chutney
Onion Coriander Chutney is a delicious and
lip-smacking dip paired with idli, dosa or even nachos, roti,
paratha or any kind of bread. You can also spread this chutney between bread
slices and enjoy it like a sandwich. Make this chutney for less than 30 minutes and
enjoy its flavorful taste. You can store this dip for a long time and eat this
whenever you want. You will need to cook this chutney until the oil separates from
the mixture. This is the secret of this recipe to store for a long time.
INGREDIENTS:
- Coriander leaves (chopped) – 1 cup
- Onion (chopped) – 2 large
- Garlic – 5-6 cloves
- Green chillies (chopped) – 4-5
- Tamarind pulp – 1 tbsp
- Oil – 1 tsp
- Salt – 1 tsp or as required
- FOR TEMPERING:
- Urad dal – 1 tsp
- Curry leaves – one sprig
- Mustard seeds – 1 tsp
- Oil – 2 tbsp
PREPARATION:
- In a pan, heat a teaspoon of oil and add onions, garlic, salt and green chillies. Sauté until golden in colour.
- Add coriander leaves and give a mix.
- Let it cool down.
PROCESS:
- In a blender, add the tamarind pulp and the onion-coriander mixture. Blend into a smooth puree.
- In a frying pan, heat oil and add all the ingredients for tempering.
- Let it sizzle and add the pureed mixture. Mix well and check if salt is needed.
- Onion coriander chutney is ready.
