CHOCOLATE COOKIES RECIPE WITHOUT OVEN

INGREDIENTS:
FOR COOKIE DOUGH:
- Plain flour (Maida) – 1 ¼ cup
- Butter (room temperature)- 100 grams
- Powdered sugar – 1 cup
- Vanilla extract/essence – 1 tsp
- Cocoa powder – ¼ cup
- Baking powder – ½ tsp
- Milk (chilled) – 2 tbsp
- Salt – ½ tsp
FOR PRESSURE COOKER BAKING:
- Salt or sand – 1 ½ cup
METHOD:
- In a big bowl take the butter, 1 cup powdered sugar, and 1 tsp vanilla essence.
- Mix everything until well combined. You can also use an electric beater to beat the mixture together.
- Continue mixing until the mixture turns silky and whitish in color.
- Sieve the Maida, cocoa powder, baking powder, and a pinch of salt altogether.
- Properly sieve and make sure there are no lumps in it.
- Grab a spatula and mix all the ingredients gently.
- Mix and crumble the flour nicely until it is properly combined with the butter mixture.
- Add milk little by little if the mixture is dry or as required.
- Form a soft dough without kneading. Bring together everything making sure not to knead it.
- In the pressure cooker, add the salt or sand at the bottom of the cooker and place a wire stand or a heatproof small size cup and then place a small plate above it. It will distribute the heat evenly on all the cookies.
- Remove the gasket and whistle of the pressure cooker and preheat for 5 to 10 minutes on medium heat. From this method, it will work as an oven.
- Now take a small amount of dough and flatten it slightly to form a cookie shape.
- Place the prepared flattened cookie dough on the plate inside the preheated cooker and give enough space between them to avoid sticking together.
- Now close the lid and bake for about 20 minutes on medium flame. You can also use an oven for 15 minutes at 180 degrees Celsius.
- After 20 minutes, open the lid of the cooker and if the texture has become slightly dark in color and the texture is a little hard then the cookies are done but if they are looking a little soft and undercooked then bake them for 5 minutes more.
- Remove the cookies from the heat and wait until the cookies cool down completely.
